Integrasi Literasi Gizi dan Praktik Memasak Sehat sebagai Strategi Pencegahan Krisis Kesehatan Rumah Tangga

Masalah gizi ibu dan anak merupakan isu kesehatan publik yang berkontribusi terhadap meningkatnya kerentanan rumah tangga terhadap krisis kesehatan, terutama di negara berpendapatan rendah dan menengah. Rendahnya literasi gizi dan keterbatasan kemampuan mengaitkan pengetahuan gizi dengan praktik konsumsi berbasis pangan lokal menjadi tantangan utama dalam upaya pencegahan krisis kesehatan di tingkat keluarga. Kegiatan pengabdian ini bertujuan untuk meningkatkan literasi gizi serta kemampuan praktik konsumsi dan pengolahan pangan sehat ibu dan anak melalui modul edukasi gizi berbasis pangan lokal yang dipadukan dengan praktik memasak sehat. Program dilaksanakan menggunakan pendekatan kuantitatif dengan desain quasi-experimental one-group pretest–posttest, melibatkan ibu sebagai pengelola utama konsumsi pangan keluarga. Tahapan kegiatan meliputi asesmen awal literasi gizi dan praktik konsumsi, implementasi edukasi gizi kontekstual dan pendampingan praktik memasak, serta evaluasi perubahan perilaku konsumsi pasca intervensi. Hasil menunjukkan adanya peningkatan bermakna pada pola konsumsi gizi seimbang, disertai pergeseran perilaku makan yang lebih adaptif terhadap pemanfaatan pangan lokal dan praktik pengolahan pangan sehat. Temuan kualitatif-partisipatif memperkuat hasil kuantitatif dengan menunjukkan meningkatnya kepercayaan diri, refleksi kritis, dan komitmen keluarga dalam menerapkan gizi seimbang. Secara keseluruhan, program ini berdampak positif terhadap peningkatan kapasitas pengetahuan dan praktik gizi rumah tangga, serta menunjukkan potensi kuat sebagai model edukasi gizi berbasis komunitas yang aplikatif, berkelanjutan, dan layak direplikasi untuk memperkuat ketahanan kesehatan keluarga.
